The Practice of Value Adding: Pickled Garlic & Plant Immunity - How to S5E15 🧄

Hi Everyone,

Farming, the most important profession of them all, is also the most difficult. I am intent upon sharing strategies that can help you become more profitable, despite the increasing challenges. Value adding is often the key to financial viability. It has certainly been the case at Nutrition Farms. We have had a major disaster for each of the past six years. We have suffered late frosts, multiple hailstorms, drought, and a major farm fire. Then we experienced unparalleled bird pressure from hordes of lorikeets who had discovered the memorable flavour of our fruit. In the face of these endless challenges, we remain economically viable only through the creation of 36 Nutrition Farms products. The demand for these juices, pickles, powders, vinegars and supplements continues to grow, to the point that we are sometimes struggling to keep up with orders.

However, it’s not just the value-added of your produce that can help. It is also the crop choice, as some crops have more value-added potential than others. 

One of my favourites is garlic, because it literally has ten potential income streams.

These include 

1) Fresh green garlic - this gives you an early income stream. The plant can be used in its entirety at the early bulbing stage to deliver much of the taste impact of mature garlic.

2) Pickled green Garlic - offering a tangy treat with cheese and other savoury dishes.

3) Fresh garlic scapes - this flower is cut and discarded by many growers, because it steals from the bulb. The plant is pumping the best of everything into this reproductive initiative, and it turns out that the tasty scape has all the diverse medicinal qualities of the nature bulb. Chefs are rapidly discovering the versatility of garlic scapes, so there is a ready market.

4) Pickled Garlic scapes - these flower stalks are delicious when combined with ACV and herbs.

5) Dried garlic scapes-  the drying process concentrates the compounds and flavour to create a powder that can be combined with a mountain salt to create something quite special. This is the product we call Salt Scape.

6) Fresh Garlic Bulbs - we receive $25 per kg for the bulbs

7) Smoked Garlic - it turns out that smoking the bulb increases the potency of allicin, a core medicinal component.

8) Fermented garlic (black garlic) - this process also changes the many sulphur compounds found in garlic, enhancing their potency. It is the classic umami flavour that lifts many dishes

9) Pickled garlic -  My partner, Claudia, has developed á recipe to die for,  and everyone who tastes her pickled garlic at the farmers markets will buy a jar.

10) Honey garlic - Here we simply combine raw garlic with our Nutrition Farms rainforest honey. It needs to be burped every day for ten days, but it then becomes a genuine taste treat. Many clients claim they remain flu-free with two cloves of Nutrition Farms Honey Garlic per day.
