Today, I am joined by Claudia to discuss a topic that sits at the very heart of the Nutri-Tech Solutions mission: value-adding on the farm. In an era where so many growers are forced to seek off-farm employment just to stay afloat, understanding how to transform your raw harvest into high-value, nutrient-dense functional foods is a complete game-changer. By focusing on nutrition farming, we aren't just growing food; we are building a microbial bridge from our humus-rich soils directly to human wellness.

One of the most exciting shifts we are witnessing globally is the movement away from alcohol, creating a massive opportunity for forward-thinking growers. Enter the shrub—an ancient, fermented health drink that delivers the complex, sophisticated flavour profile of a fine wine with none of the metabolic load. By leveraging the natural synergy of our chemical-free mulberries, feijoas, and rosella calyces with our own raw honey and raw apple cider vinegar, we can create an exceptional cordial-like concentrate. The Yacon Revolution: A Sweetener that Heals

Beyond fermented drinks, true farm profitability comes from identifying unique, high-value crops like yacon. At NTS, we have become major Australian producers of pure yacon syrup—a remarkable, low-glycemic alternative to traditional sugars. The process begins out in the patch, harvesting the magnificent, knobbly rhizomes. Unlike chemical farming, which often results in unstable, "funny protein" expressions in crops, nutrition-finished yacon produces clean, fructose-oligosaccharide-rich juice. We juice the roots, pass the liquid through cheesecloth, and simmer it gently in large boilers, carefully skimming the froth for the first few hours while keeping the edges immaculate to prevent burning.

Precision is paramount when preparing this prebiotic powerhouse. To make a single litre of concentrated yacon syrup, we reduce down roughly ten litres of pure juice. While standard commercial regulations require a finish of 72 Brix, we prefer to push our reduction all the way to 80 Brix. This compensates for any minor condensation within the bottle, ensuring an exceptionally high-quality, stable product that can be bottled hot and preserved naturally through sheer density.
